So far there's quite a few I intend to try. I have six eggplants in my garden but they seem so tiny we are not having a very good summer
But that won't stop me I'll just buy them at the store if I have to lol

Denise, have you tried painting the slices with oil seasoning with salt-and-pepper and garlic and grilling on the George Foreman type grill?

Jean, what is it you don't care for about eggplant. Some people think that it's a good idea to salt the slices and let them sit for 30 minutes, then rinse before using. I've never done that, but if you think it's bitter, maybe that would help. If you like breaded fried zucchini, then most likely you would like breaded and fried eggplant. Or maybe you would prefer the little Japanese variety. Those are good too.
We grill them as Cis said and top with provolone and set in a puddle of sauce.
