We were in a restaurant in Seattle. And we're having sandwiches. And they offered a sauce made of hatch chiles.
It was so good.
Does anyone know how this would of been made. Was a cream color.

Wait for Bill to come on, also - he cooks with Hatch chilis all the time.

Wheels are turning in my head. I bet that first one from Chef Jamie would be great on some grilled steak or chicken tacos instead of a chipotle cream sauce that I do a lot.
Might have to do that this week.

Chef Jamie Gwen????? Man, I saw her when she was first starting out as a cook on Cristina's show in the 80s!!!!! Wow.

That'd be the Jamie! Not sure all of what she's doing these days but she does have a radio program on Saturday mornings on my local KABC station. Not sure if it is syndicated or not.

Hatch Chili Dip
4 garlic cloves, minced
3 cans hatch chiles, one hot, two mild
1/4 C Mayo
8 oz cream cheese, soft
2 avocados diced
Juice of one lime
Salt & pepper to taste
Process chiles and garlic in processor until paste. Add remaining ingredients and process to combine. check seasoning and serve with tortilla chips. Great dip. (Modified Central Market recipe).

They sure are and we got to Hatch, New Mexicco on our road trip and that was a hoot!!
