Food Network newsletter sent this list yesterday and some of them sounded so good, decided to start in on them the same day!! Last night for our snack, we had #3 - Cajun Nachos.
Pretty much followed their lead, but didn't have Andouille, so used some smoked from one of the butchers we visited in Austin. No cheddar, so used combo of Mozz/Provolone/Jack and threw in some water chestnuts.

then when they came out of oven, topped with salsa and pickled jalapenos.

Have never put celery on nachos, but it's really good!!!
