For those of us who sometimes have to revert to oven baking of pizzas, I saw the neatest hint on a forum this a.m. and I tried it today with Roy's sausage/sauerkraut pizza - even tho the sun was shining.
I'm assuming most of us put the pizza on whatever on/in the lowest part of the oven that we can. the tip is - lower the next oven rack down close enough to still be able to slide the pizza in and when you put the pizza in the oven also slide a baking sheet on the lowered oven shelf. This will concentrate the heat more.
And, it sure did make a difference in this pizza.
gorgeous - the top browned much more than usual.

O.K., sigh, I guess I am done dispensing wisdom today - time for a glass of wine.
