Well, how 'bout this - off the wall enough to try it.

GRILLED CAVIAR

Chef/Owner Victor Arguinzoniz
Etxebarri - Axpe -- Biscay, Spain

Caviar, good quality 15 g
Soft-grilled applewood branches as needed

1. Place caviar in flat-grid strainer (similar to a tamis) with handle over applewood branches and cover pan with a transparent cover.

2. Once fat begins to break and caviar is heated, remove from pan and serve in small bowl.
