THIS was on the latest "Masterclass" episode of Masterchef New Zealand. On the show, judge Josh says he'd really call it a parfait, rather than an ice cream, since it's just frozen directly in the freezer, instead of with an ice-cream machine.
Either way, this sounds especially good and I'm saving it for some day when I have soufflé dishes and finally get into making soufflés.
