First time I've made truffles and not ended up in chocolate to my elbows and that's because........................................
they are mashed potato truffles. 7 years ago my friend, David Hunter (C2C's romany123 from brightlingsea, England) gave me this recipe to include in Share a Recipe cookbook. I've never made it before today.
What an easy way to get a chocolate jolt!!
about 3/4 cup smooth mashed potatoes
2 T. sugar
2 T. cocoa powder
Almond or vanilla flavouring (~ 1 tsp)
milk to make a stiff paste/dough.
Mash potato thoroughly, mix in cocoa powder, sugar and flavouring to taste. Work into a stiff paste, mould in balls. Roll in cocoa powder unti thoroughly coated, then in vermicelli (I don't understand this, but will ask him), if obtainable. this made 18 truffles
