Review: Layered Pina Colada Chicken Salad

This is such a nice light flavorful salad!!! It's from a newsletter I get from Hawaii and we had it for dinner today.

Layered Piña Colada Chicken Salad - Hawaiian recipe - serves 6

Dressing
1 container piña colada lowfat yogurt -- (6 ounces)
1 1/2 tablespoons fresh lime juice -- (1 1/2 to 2)
1 teaspoon Caribbean jerk seasoning (dry)
Salad
3 cup shredded romaine lettuce
2 cups cubed cooked chicken
one can (15 ounces) black beans -- drained, rinsed
1 1/2 cups diced peeled ripe mango
1 cup chopped seeded plum tomatoes (2 to 3 medium)
1/2 cup shredded reduced fat cheddar cheese
1/2 cup thinly sliced green onions (8 medium)
1/2 cup slivered almonds

In a small bowl, mix dressing ingredients until well blended.

In a 4-quart clear glass serving bowl, where salad ingredients except almonds in order listed. Spoon dressing evenly over salad; sprinkle with almonds.

and, here's a Caribbean jerk seasoning I made -

Caribbean Jerk Seasoning & Rub
2 T. dried minced onion (I used 1/2 T. onion powder)
1 T. garlic powder
4 tsps. crushed dry thyme leaves (I used 1 T.)
2 tsps. salt
2 tsps. ground allspice
1/2 tsp. ground nutmeg
1/2 tsp. ground cinnamon
1 T. sugar
2 tsps. black pepper
1 tsp. cayenne pepper (I used 1/2 tsp.)

In a jar with tight fitting lid, shake together all spices and seasonings. Store tightly covered at room temp. Makes about 1/2 cup


Because I'm not a big yogurt fan, I didn't have high expectations for this, but we both just loved it.... that's why no pictures.

Sounds so "springy"! Perhaps this should go on the menu in the next two weeks, you know, to get us in the mood.
