Does anyone use a proofing basket when making the 18 hour bread? I know that sometimes, I just let it set on the board and throw a towel over it until baking time. Today, however, I decided to use a wicker basket and try it without the towel to get a pretty design.
I dusted the basket heavily with flour and also sprinkled oats, before dropping the dough in for the 2 hour rise. It turned out so pretty, but my camera just isn't picking up the design to do it justice.
P.S. Be sure to spray the basket with spray oil before dusting with flour.

Hmmmmm - wonder if I brought mine??? I never had real good luck with them so they might be in ND. Darn I'd love to try again with the spray oil trick.

It's just a crummy old basket that sits on my counter and holds fruit, not a real proofing basket. Although, I do have my eye on one.

So, nothing between the dough and the basket? I DON'T NEED TO MAKE MORE BREAD!!! Shoot, I'll have to try this, tho.

I just figured out my birthday request from my mom. She makes baskets, as many of you know. I'm thinking one of her Nantucket baskets would make an excellent proofing basket!
