James and I hiked again the other day, and this time we brought along the Herve Mons Camembert from Whole Foods. Our friend had picked it up for us about two weeks ago. We had it "aging" in the fridge.
Well all I can say is RUN to your nearest Whole Foods and buy some. It was just wonderful!!!! Probably the very best Camembert we've ever had.
So, happy to find it

Anything Herve Mons makes is brilliant! Haven't seen the Le Rustique.

Previously we would age and enjoy the Le Chatelain, but it's gotten hard to find.(But Maryann did find a supplier) There are no Whole Foods anywhere around here, but there is one right near my daughters' in OH. Now, we will surely bring a cooler and bring some home whenever we visit.
Jean, I think this one will work stunningly in the Brioche recipe. I hope you get to try it soon, OMG sooo yummy!
