Re: (...)
This just intrigued me . . . and I am so glad I made it!\
1 1/2 lbs (about 4 1/2 cups) carrots peeled and sliced
1/2 cup mayonnaise
2 TBS finely chopped onion
2 TBS horseradish
salt & pepper to taste
1/2 cup crushed saltine crackers
2 tsp melted butter (I used 2 x this amount)
Preheat oven to 350. Put carrots in a large pot and cover with water. Bring to a boil and cook just until carrots are tender - drain.
Place carrots in an ungreased baking dish (1 gt).
In a small bowl combine mayonnaise, onion, horseradish, salt, and pepper. Mix well and spoon over the carrots.
Combine the crushed saltines and butter - sprinkle over the carrots. Bake uncovered at 350 for 20 to 30 minutes.
Yummmm - these are soooo good.

I made these again last night - it never occurred to me that anyone wouldn't like carrots. Jeff hates carrots - he loved this!
So we took a plate of roast beef, mashed potatoes and these carrots down to Chad. He only likes carrots when they are cooked to jello consistency. He shoveled them in with his fingers and raved! These are going to be back on the top of the pile for the winter. Just too darn good.

This last week I went to four spice shops in Seattle all near the Market
and one of them was Penzey's store
Nice spice shop and lots of interesting items to look at and lots of
wants in this trip. !
Carrots sound like a great dish.
Everything will be all right in the end. So if it is not right, then it's not yet the end.

Wow, must get down to the market - haven't been there for 2 or 3 years.

I am more than likely safer ordering on line. The store is just too full of temptation.

I agree with Sharon! That would be too dangerous!
