Tonya made this for a bridal shower yesterday and it was fantastic. I could eat a bloody ton of this stuff! Jean I'm not sure where the mango went, I didn't see it in the salad, but I'd sure toss some diced mango in! Yummy stuff!
Party Chicken & Pasta Salad
Prep time 40 minutes
Servings: 12
Salad
5 cups uncooked rotini pasta
4 cups cubed cooked chicken
1 cup thinly sliced celery
½ cup chopped green onions
12 oz fresh snow pea pods, trimmed, halved crossways
2 cups red or green grapes, halved
1 can (8oz) pineapple tidbits in juice, drained reserving liquid
1 cup slivered almonds, toasted if desired
6 to 8 leaves lettuce
Dressing
1 cup mayonnaise
2 T finely chopped fresh ginger
1 tsp garlic salt
2 T reserved pineapple juice
2 T soy sauce
2 T honey
Cook and drain the pasta as directed on package. Rinse with cold water to cool. Drain
Meanwhile, in a large bowl, mix remaining salad ingredients, except almonds and lettuce. In a small bowl mix dressing ingredients until well blended. Add pasta and ½ c of the almonds to salad; stir gently to mix. Add dressing and toss to coat.
Line serving bowl or platter with lettuce. Spoon salad over lettuce. Sprinkle with remaining almonds.
