Hey all,

I've got to learn how to bookmark recipes here so I can easily reference them.

A while back, someone posted - and I think it was about Ina Garten - how to pan fry a filet and finish it in the oven. I thought I had written it down, but can find my note anywhere.

I searched on Ina Garten and couldn't find it with a year's worth of posts.

Does anyone out there remember posting this?

This is my preferred way to do a steak - even better than grilling them on a grill.

Also, this is a great method for a fish filet, if you're interested, Barbara. Sear beautifully on one side, turn over and stick in hot oven. If it's not a really thick piece of fish, there is no way you can get a beautiful crust, especially on both sides, without overcooking the darn thing.
