What's on everyone's menu?? (sounds like Laura and Erin might have leftovers)

Guess it depends on what time we get home, either stop at Casino or do some kind of a fast pasta.
Retired and having fun writing cookbooks, tasting wine and sharing recipes with all my friends.

Since I have to wait until tomorrow to buy shrimp for the final recipe, Lemon Shrimp Skewers, from the latest Grilling book (last of my four for my personal cookbook challenge), William suggested hot dogs. Since I've got to finish my major overhaul on my kitchen in the heat today AND smoke my bacon, this sounded like a good plan.

Tony's going to go to Costco to see what kind of fresh fish they have. We've been getting some really great sockeye salmon there (with the skin on) and we've been grilling it. Probably keep it simple with a lime butter sauce. Real basic sides - maybe corn on the cob and baby potatoes.

No idea yet. Just made pancakes for breakfast. I do have leftovers, but I don't enough for a full dinner for four. Might make a great lunch though!

Well, so far I have made a big mixed green salad with lots of veggies, a pineapple upside-down cake, and have jumbo shrimp marinating in garlic and olive oil, (Jean's recipe) to go on the grill later. That might be it unless I get the motivation to go pick up some fresh corn.

Oh, I love shrimp done that way, Maryann! I'll just leave William with his hot dogs and come to your house. I also have a weakness for pineapple upside-down cake. I've been meaning to make that for a long time.

Daphne, that would be so much fun! You and William and both welcome here any time! You might want to bring him along today, as I changed my mind about the corn and am making Pasta Pomodorini (by Musicmaker/Linda) and I put a fair amount of chili flakes, fresh garlic, and fresh basil in that. Yummy!

I've spent the weekend cooking meals for my father in law. So I'm cooked out. I think we'll just do tuna salad.

We have tons of leftovers, but had some already for breakfast and lunch. Hubby is going to make the Porterhouse and Chimichurri from C@H F@F (Fresh & Fabulous). That book is turning into a real winner.

Will add some reviews to Erin's wonderful thread!

Daphne, I'd love to her how your bacon turned out. Mine was pretty good, but I think I need a good slicer if this is something I'm going to do on a regular basis. The flavor of the bacon was terrific, but my family likes their bacon crispy and I am not good enough with a knife to thin-cut the bacon. I took pictures, but haven't had a chance to post. Both of my boys decided today was the day to learn to skydive, and I've been REALLY tense.

Everyone (including skydiving sons) preferred the maple cure to the savory cure except me. I think the savory cure would make the best BLTs ever!
