I do not have any of the issues from this year but would love to have the recipe for "Chipotle bacon breakfast sandwich with tomato avocado salsa". It is April 2007 page 46. There is no hurry for this, it just sounds so good. Thanks in advance.

This does sound good! Here's the recipe:

Chipotle Bacon Breakfast Sandwich with Tomato Avocado Salsa


Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
FOR THE BACON:
8 strips thick-sliced bacon
2 Tbs brown sugar
1 Tbs chipotle in adobo, minced
1 Tbs red wine vinegar

FOR THE SALSA:
1/2 cup cherry tomatoes, quartered
1/2 cup avocado, pitted, peeled, sliced
2 Tbs scallions , sliced thin
2 Tbs fresh cilantro, minced
1 Tbs mayonnaise
juice of 1/2 lime
Salt and pepper to taste

FOR THE SANDWICH:
4 eggs
4 slices pepper jack cheese, 1/8" thick
4 kaiser rolls, split and toasted

1. Fry the bacon in a nonstick skillet over medium heat until crisp. Remove
the bacon, pour off the drippings, then add the brown sugar, chipotle, and
vinegar to the pan. Return pan to the burner and simmer over medium heat for
1 minute. Add the bacon, turn to coat with glaze and heat through, then set
aside.

2. Combine all salsa ingredients in a bowl; set aside.

3. Cook the eggs in butter over medium heat in another nonstick skillet
until whites are set; season with salt and pepper. Break the yolks, flip the
eggs, and cook another minute. Top eggs with cheese and cover the pan for 1
minute to melt. Assemble the sandwiches on rolls with bacon, eggs, and
salsa.

Thanks Karyn, this sounds even better than I expected! Only I will not break the yolk. I love it runny. Oooooo, can't wait to try this one.

Oh wow! I have everything but the pepperjack. May have to pick some up when we go to town for the mail.

We just had these for breakfast this am - all either one of us could say is WOW!!! What a fun breakfast. I think we could eat this daily!

"Chipotle Bacon Breakfast Sandwich- Issue #62" - Theresa, I hope you don't mind that I edited the title to this thread, but I was afraid it would get lost. I had trouble finding it.

Anyway, we had these this morning and and what pigs we did make of our own selves!!!! My, this is a tasty brunch!! (William, just use any tomato based salsa for yours.... )

Darn, the picture didn't turn out. It was a gorgeous presentation also! I'd give this a 10! (and I didn't even realize it was a C@H recipe)
