I have been trying to eat up the green beans growing in my garden but some of the bush beans got away from me and were larger than I like to eat them. So, I tried this soup with them and it was really very good and easy. Just thought I would share it...

Cream of Green Bean Soup

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1/2 lb. green beans
3 c. veggie stock
2 small potatoes -- peeled and quartered
1/2 c. chopped chives
1/4 c. butter
2 small cloves crushed garlic
1/2 t. salt
1/8 t. pepper
1/4 c. sour cream
1 T. lemon juice

Combine all ingredients (except sour cream & lemon juice) in a soup pot
and bring to a boil. Cover, reduce heat and simmer for 20-25 min. Place
1/3 of the bean mix in a blender, puree, then recombine with previous
mixture. Fold in sour cream and lemon juice.

Sounds great--I may try this, adding a little heavy cream and cayenne pepper, then puree the whole thing--I love that kind of soup!! Thanks Erin!

I also Pureed the whole thing. The kids and I ate it for lunch. I have more green beans so will be making another batch.

call me crazy but this looks like it would make the most delicious starter for dinner on a very cold windy night. the kind of night that is probably quickly upon us.

I've been using my green beans to make this salad but I'm going to try the soup.

Green bean salad (hot or chilled)

Put cleaned green beans on cookie sheet or baking pan.
Add garlic cloves slivered
Add red onions slices
Drizzle w/ olive oil

Cook at 400-450 & turn every 7 minutes for 20 minutes
When done, put in bowl and toss w/ balsamic vinegar (2-3 T)
