This is from the latest Weeknight Menu book, page 85.

This was a hit with us - love one pot meals. I did make a couple of substitutions - boneless chicken breasts instead of thighs and proscuitto instead of ham. I also used a 14 oz can of diced tomatoes versus the 28 oz can of whole and to make up for some of the liquid I added just a little bit of orange juice.

As with a lot of C@H recipes, the finishing touches are great. The chopped green olives and the gremolata were just right.

I'd give this an 8 out of 10 and will definitely make it again.
