Well, that's what I'm trying to find out, Daphne. Does anyone have a seasoning mix recipe for beef sticks? These are the kind you see in butcher shops that are sort of like jerky, but are actually a dried sausage for snacking.
The seasoning packets from Nesco have one package of cure and one pack of seasoning per pound of ground beef. You mix them all together, then put the meat into what looks like a small cookie press that forms little sausages. These go into the food dehydrator for 5 hours or so. I'm guessing that the seasoning mix has salt, pepper, garlic powder, paprika, smoke flavoring and maybe a touch of sugar, but have no idea what amounts to use for each pound of meat. I do know that I need 1 T. of cure, as that is on the package from Morton's Quick Cure.
If I had some idea how much seasoning to use, then I wouldn't have to order the seasoning from Nesco and could just mix my own.
