Just saw this Billy - here you go - hope you all enjoy it!!

Cheesy Meatloaf
serves 6-8

meatloaf:
1 lb. ground beef
3/4 lb. grd. pork sausage
3/4 cup fine dried bread crumbs
2 large eggs, lightly beaten
2 T. each: soy sauce, ketchup
1 tsp. each: prepared mustard, worchestershire
Salt & Pepper
---
filling:
1 cup packed shredded cheddar cheese
1/3 cup freshly grated Parmesan cheese, divided
1/4 cup crumbled blue cheese or gorgonzola
1/2 cup chopped green onions
----
topping:
1 med. tomato, sliced and drained for topping
2 T. chopped fresh parsley

oven to 350F.
Combine all the ingredients for the meatloaf; mix well. spread half the meat mixture in a lghtly oiled 8X8-inch baking dish or pan.

Layer on the cheddar cheese, leaving a 1" border to help prevent the filling from oozing out.
Sprinkle with 3 T. of the parmesan, all of the blue, and the green onions.

Add the remaining meat mixture on top and press firmly around the sides to enclose the cheese and onions. Bake for 50 min.

Arrange the tomato slices on top, overlapping slightly, if necessary. Sprinkle generously with pepper, the remaining parmesan and the parsley.

Bake till the tomatoes are lightly browned and the cheese is melted, about 10 min. longer. Let stand in the pan for 5-10 min. before serving.

This was wonderful. It did taste like a cheeseburger. The family gets home about midnight so I don't really expect much to be left in the AM.
