Another old dog enlightenment!! Talked to the bartender at the casino where we ate dinner last night and she loves to sprinkle brewer's over freshly popped popcorn.

I googled it this morning and sure 'nuff, there were three references to 'brewer's yeast, popcorn' - have anyone heard of that????? (If you have, better have a good excuse for not telling us )

Roy is, as we speak, downtown buying brewer's yeast and we'll try it as soon as he gets home.

How interesting. I did my own google and found the following information on nutritional vs brewer's yeast. We might have to have a pop off.

" * > Brewer's yeat is absolutely NOT interchangeable with nutritional
* >yeast - I don't know what the fellow at the store was thinking! It doesn't
*
* A lot of places tell you it is the same thing. I went to a HFS here
* in Fremont asking for nutritional yeast and was directed to brewer's
* yeast and told it was the same thing.

I'd like to confirm that the three HFS in which I shop (in Atlanta) all insist
that brewer's yeast and nutritional yeast are the same thing. Surprisingly
though, they do carry both, and they are labelled correctly.

The brewer's yeast is always in the vitamin/mineral section, and the
nutritional yeast is in brown bags, typically with the bulk foods. (I
understand that nutritional yeast is light sensitive, hence the brown bags.)

To reinforce this misnomer, even the recipes published by the esteemed Dr.and
Mary McDougall call for "brewer's yeast"! I don't know if this has been
corrected in their newer books, but their original books helped to spread this
confusion.

Nutritional yeast tastes and smells good right out of the bag. (Brewer's yeast
does not.)

Try some nutritional yeast on popcorn! Sprinkle or squirt lite soy sauce on
air-popped popcorn and then sprinkle on the nutritional yeast, by the
tablespoon. My husband, dog, and I fight over who gets to eat the yeast remains
in the bottom of the bowl. :-)"

nutritional yeast

Equivalents: 1 tablespoon powdered = 2 tablespoons flakes Notes: This nutritional supplement has a pleasant nutty-cheesy flavor and is packed with protein and B vitamins. It comes in flakes or powder and is popular with vegans and health buffs who use it to make cheese substitutes, gravies, and many other dishes. It's also a great topping for popcorn. Nutritional yeast is very similar to brewer's yeast, which is also used as a nutritional supplement and is made from the same strain of yeast. The difference is that brewer's yeast is a by-product of beer production and retains some of the bitter flavor of hops. Don't confuse nutritional yeast, which is deactivated, with active forms of yeast, like the kinds bakers, brewers, and winemakers use. If you eat them, active yeasts will continue to grow in your intestine, robbing your body of valuable nutrients . Look for nutritional yeast at health food stores. Get fortified nutritional yeast if you're taking it as a source of vitamin B12. Substitutes: brewer's yeast (inferior flavor, darker color) OR Parmesan cheese (as a condiment; higher in fat, less nutritious) OR wheat germ (works well in baked goods or sprinkled on cereals) OR yeast extract

On a slight tangent, here's an interesting-looking recipe I copied down, but haven't tried, yet:

Popcorn Bread
(Makes 3 loaves)

Ingredients:
  • 1 C Boiling water
  • 1 C Cold milk
  • 1 1/2 Pkgs Dry yeast (1 1/2 Tbsp)
  • 3/4 C Sugar
  • 4 C Popped Corn
  • 1 tsp Salt
  • 3 Eggs
  • 1/3 C Melted Butter
  • 7 C All-purpose flour
  • Melted butter for crust
Instructions:
  1. Combine the water and milk in a large mixing bowl and stir in yeast and sugar.
  2. Let stand about 10 minutes until surface is bubbly (proofing).
  3. Pick through the popcorn and discard any unpopped kernels.
  4. Run the popcorn through a blender or food processor until it is the consistency of cornmeal.
  5. Add to the mixture in the bowl with the salt.
  6. Beat in the eggs and melted butter and gradually work in all the flour.
  7. Turn out on a lightly floured surface and knead for 10 minutes or so, until the dough is smooth and elastic.
  8. Grease a large bowl and put the dough into it, turning to coat the entire surface.
  9. Cover and let rise in a warm spot, usually 25 to 30 minutes.
  10. Punch it down while still in the bowl.
  11. Cover and let rise once more.
  12. Turn out onto a floured surface and separate into 3 pieces.
  13. Shape into loaves and place in 3 greased 9 x 5-inch loaf pans.
  14. Cover and let rise until doubled in size, about 1 hour.
  15. Bake in a preheated 350° oven for 35 to 40 minutes or until golden brown and tests done.
  16. Remove from oven and brush melted butter over top.

Popcorn: We used "nutritional" yeast that I found at a local Whole Foods store. I used my fingers to flick soy sauce onto the popcorn before adding the yeast. The bottom line is bottom indeed. 90+% of the yeast did not adhere to the popcorn rather dropped to the bottom of the bowl. Useless. Next time we'll try a little spray bottle so that there is more adequate coverage of soy dampness on the corn.

The taste was different and quite good when I slightly dipped the corn in soy sauce and scraped up a little yeast from the bottom.
