The Phantom Pfisherman. Walleyes. They have such a delicate taste and are so good on their own that I don't do anything exotic. I either:
Pan fry with just salt and pepper.
Flour with salt and pepper and pan fry.
Panko with salt and pepper and pan fry.

That was my first thought, too. Cornmeal and bacon drippings! Drool, slobber, yummmmm.

The only time I get to eat Walleye is back home in Quebec. That's how my Mom does it. Then again, bacon grease was one of the 5 food groups in our house.
