A little freezer dive found some smoked pulled pork which got layered with polenta and topped with some cheese and baked until bubbly. Corn with sliced jalapenos & chopped red onion on the side.

Thank you Blane. I am leery of freezer dives . . . ever since we had that challenge a few years ago. I made Ropa Viejo with the last piece of venison backstrap we had in the freezer. Bummer, but darn it was good.
