Hey! l Where is everyone!!! I know it's the week before Christmas, but people still have to eat! Big Grin

Tonight is Alyssa's orchestra concert. (she plays violin) So, I wanted to have something prepared, because I have to go pick up my dad and bring him over. This morning, I made beef, barley, and vegetable soup. Last night I started 18 hr. no-knead bread that will go in the oven in a bit.

Only one more batch of nut horns and my Christmas baking will be done! Yay!

DINNER THREAD---12/18/ to 12/24/2017 Mare749 Hey! l Where is ever...
I felt silly being the only one posting in last week’s thread.  LOL!  But I’m here!

We went to a really nice party yesterday afternoon, and the food was outstanding!  I finally got to sample marinated pork belly!  Jean would have swooned, it was so good!!!!  And there was so much of other lovely things, including the largest crab stuffed mushrooms I’ve ever seen!  YUM!

Tonight, we are having grilled Peppers, Onions, and Italian Sausages with marinara and garlic bread on the side.

Okay, I had to come back and report....when it was time to put the garlic bread on, I discovered we ate it all with the hot roast beef sandwiches last week.  OIY!  I checked my pasta stash and found about half a box of small shells.  I cooked them up and served the sausage mixture over.  OMG!  So good!  There was just enough pasta to give the sausage mixture a creamy texture and flavor!  This will be repeated!

Daphne, I'm confused. Weren't you able to see any other posts in last week's dinner thread? Sharon, Trixxee and I all posted last week.

We're back from the concert and Ron is making pickled eggs. Whew! Stinky! Rolleyes

Note my addition from tonight’s dinner.

No, I saw everyone’s posts, but just not the past few days.

Last night all of my dinner plans went to h#ll!  I even screwed up eggs and hash browns!

Tonight I headed for a chicken "Shepherds Pie".  The chicken wouldn't thicken up for the "pie" so we had creamed chicken & veg over mashed potatoes with crispy onions & a bit of parm on top.

We did a little exploring today down to Yachats, Or.  Due to the gloomy weather we didn't do much other than the overpriced grocery store.  This is really a beautiful area . . . I can't wait until the weather gets better and we can go to the beach.  Sigh.

Daphne - I thought of you today when  Michael got this email from the local community college.  Right up your alley, right?

Hello Students,
Are you looking for a Spring semester class that will teach you valuable technical skills? If so, consider taking GEOG 155/SURV 155- Intro to Geographic Information Systems (GIS) on Wednesdays from 3:00 pm - 6:30 pm. This class will explore Geographic Information Systems (GIS), which is a suite of tools that allow users to map and analyze spatial data. GIS is just one part of the larger geospatial technology industry.
Why take a class in geospatial technologies?
1. It isn't just for geographers. Wink
2. Geospatial technology is considered an emerging industry.
3. Geospatial technology is a high growth industry.
4. Job opportunities include local, state and federal government agencies as well as private sector jobs.
5. Types of job titles: Geospatial Intelligence Subject Matter Expert, Geographic Information System Analyst (GIS Analyst), GIS Coordinator, GIS Specialist, cartographer or photogrammetrist.

Source: U.S. Department of Labor
Geospatial technology is a skill that can be applied to your major. Attached is a graphic showing just some of the industries that use GIS. To explore how GIS is used, check out http://www.esri.com/industries< /a>

Oh if I were only younger!  That would be so fun.  Bob spent a almost a year scanning maps in for a county GIS system in CA. He really enjoyed it.

I am thawing a hunk of pork that I am going to grind and cook with some red chili sauce for enchiladas.  I have some refried beans left over from the other night.

am cracking up over the weather here.  It's 47 degrees, probably won't get much colder - but it must have rained an inch or two today!  It was great, we just stayed in and watched the rain and answered the phone both times it rang (business line).  Oh, and we picked up the mail and sorted it for all the different spaces - we'll deliver it tomorrow.

I'm trying a new recipe with Costco's top sirloin - beef tips in mushroom gravy.  Over riced cauliflower.

Nice save, Sharon!

Oh Trixxee!  That is so cool!  One of our former waitresses took some of those type classes in college and loved it so much, she doing a personal project for a book on National Parks or something like that. And now she is going back for her masters in that!  Is Michael thinking of taking it?

And I love your dinner idea!!!!!

We worked really hard on some difficult maps last week with very little money coming in.  Today was our payoff for all that hard work!  Celebrating with a couple of little fillets and bakers!

I finished my last batch of cookies today. So, now all I have to do is make up all my cookie trays. Whew!

Dinner tonight was a new recipe I found for a Spicy Chinese Pork Tenderloin. We absolutely loved it. In fact, Ron wanted the l/os to take in his lunch tomorrow. That's always a good sign.

Daphne, I noticed that Loco Joe's is now making Pho on Monday, I think. Have you tried it yet? That is my absolute favorite soup in the whole world!
