Cooking dried soy beans

Does anyone ever cook dried soy beans? I don't think I've ever seen them with the dried beans, so thought it was interesting that they look very much like a navy bean, at least in the picture I saw.

I'm really wondering why we never see any recipes using them.

Good question Maryann. I just looked thru my MasterCook and found no recipes using them. I guess if I ever saw them offered I would pick them up....

Thanks Jean, I read a similar article. Very few recipes out there. I did find one that was similar to baked beans.

Maryann. The only time I have used them. Was in a thin soup at a Chinese cooking class.

Here is the recipe :

SoyBean Soup

1 cup soybeans
1 Tbs Sherry
1 Tbs. light soy
1/2 tsp salt or less
1 tsp sugar
5/6 cups broth or water


Rinse soybeans. Add water and bring to boil
Let simmer 3/4 hours
just before serving stir in remaining ingredients


Here is a recipe also in recipes for Vegetarian Stock

1 cup soybeans
1 oz. dried mushrooms
6 red dates
6 cups water
salt to taste

Combine everything and bring to boil, simmer a couple of hours and strain.



I have no notes on either of these recipes - was in the Vegetarin Classes
I have taken

Perhaps embellish the soybean soup with bits of tomato ?

Can't say that I have made either of these since class.

Thank you, Marye! Do you happen to remember is you liked the soups when you made them?

Guess they could be used in miso soup, too. Then it could be called two soybean soup.

I've used them to make soy milk. If anyone's interested, I'll look for the recipe tomorrow.

Sorry for the late reply - back in "the day" I used to cook dried soybeans a lot - pretty much using them in place of any other bean. There are white and black soybeans and they can be used in the same ways as white and black beans. They can take a little longer to cook. You also should make sure that your dried soybeans are not GMO.

My only other caveat is that over-consumption of soybeans is not great for women, especially if they are taking HRT or BC meds.
