I saw this on Travel Channel--somewhere in Maine---

Grill pork belly slices
Grill slices of rye bread on same griddle to use grease
Stack caramelized onion on meat
Stack meat/onion on a slice of the bread
Cover with sliced cheddar cheese
Top with 2nd slice of bread
Turn to melt the cheese

I did not see that they added a dressing.
I'm not used to pork belly--it looked and sounded good-What do you think Jean?

I'm on it, Bill - have pork belly in the freezer!!! sounds really good.

Daphne, the one I saw was on Travel Channel and hosted by some guy who is the ultimate carnivore--it was in a grill in Maine--this one looks good too. The one I saw did not have a panini press and I don't recall a sauce. Maybe we can play with them and consider a fusion.

Absolutely a Faux Reuben. Pork belly instead of corned beef and onions instead of kraut. I didn't see any dressing. Interesting.
