What's everyone up to?
I have 4 day old lamb ribs that we haven't been around to eat after I cooked them up, so will have that and the Beet Tabbouleh with lemon, mint & feta from issue #73.
Madmax made it and she just loves it - she's been on a bulgar kick lately, so guess we'll join the bandwagon too.
Retired and having fun writing cookbooks, tasting wine and sharing recipes with all my friends.

Leftovers from last night - meatloaf and the following side:
Potatoes, Tomatoes and Red OnionsIngredients:- 2 Medium to large red onions
- 2 Pounds potatoes
- 1 Pound tomatoes
- 6 Tbsp olive oil
- 1 Cup grated Parmesan Or Romano cheese
- Salt & Pepper
- Fresh Basil - chopped
- 1/4 cup water
Instructions:
- Preheat oven to 350F.
- Grease 13x9x2 pan with olive oil.
- Slice all vegetables thinly.
- Layer 1st onion, 2nd potato, 3rd tomato.
- Pour on some olive oil, salt & pepper, basil to taste, 1/2 cup cheese.
- Layer again- Overlap top layer for presentation.
- Top with cheese 1/2 cup.
- Pour water on top
- Bake 1 hour at 350 Degrees.
If blueberry muffins have blueberries in them, what do vegan muffins have?

I'm making lobster and crab ravioli with a sun dried tomato/red pepper cream sauce on top. Salad and garlic bread.
I have no ideas for the rest of the week so I'm going to have to steal some of yours!

We were planning to have leftover pork tenderloin, except college boy came home last night and ate it. So, I'm going to make the mushroom ragu with sherried tomatoes on polenta from one of the cooking for two books instead.

We having Jean's Jammed Up Pork Chops!!! Made some Jalapeno jam with frozen berries and jello. Corn on the cob and spring salad with raspberry vinegarette. MMMmmm, looking forward to dinner.....and wine

Ron went to the farmer's market, so we had some really good olives, Italian bread, a mixed green salad, corn on the cob that was actually good, and leftover pork tenderloin. Great meal.

OMG!! I made the French Onion Salisbury Steak recipe from issue #50, page 32.
It was a bit of work for a weeknight recipe, but it was delish! I doubled the cook time for the onions to 10 minutes before adding the rest of the ingredients.

Leftover ham, leftover potatoes/carrots/turnip/rutabaga, leftover stewed cabbage. Made two desserts (haven't tried them yet) double cgocolate biscotti with almonds, and lemon cookies with a lemon glaze.
Practice safe lunch. Use a condiment.
