Spicy Pizza Sausage
This mixture also makes tasty meatballs

1 lb. ground pork
1 lb. ground turkey (we used chix)
2 tsps. fennel seed
2 tsps. kosher or coarse salt
1 1/2 tsps. crushed red pepper
1/2 tsp. dried basil, or 1 tsp. chopped fresh
1/2 tsp. dried oregano, or 1 tsp. chopped fresh
1/2 tsp. freshly ground black pepper (medium grind)
1/4 cup chopped fresh parsley (or 2 T. dried)
3 garlic cloves, minced
2 T. grated Parmesan or Asiago cheese
1/2 cup dry red wine
1 tsp. olive oil

In large bowl, combine the ground meats and mix well. Add the fennel seed, salt, crushed red pepper, basil, oregano black pepper, parsley, garlic, & Parmesan. Mix well, using your hands. Add the wine; mix well.

In a large skillet, heat the olive oil over medium heat, then saute the sausage stirring to help the sausage crumble for 10 min, until the meat is evenly browned.

Use on top of pizza; freeze any leftovers in usable portions.
