Bob didn't have any calls first thing this morning so he wanted breakfast. Poached eggs on toast, but since he packed the blender no Benedict was on the menu. Hmmmmmm.
Huevos con Linguiça was born!
1 lb bulk linguica
1 small onion halved and sliced
1 small tomato diced
1 cup canned pinto beans with 3 or 4 Tbs. of the liquid
Salt and pepper to taste
4 eggs
1 1/2 c. cheddar cheese sauce
Toast - optional
Cook the linguica until no longer pink, drain excess fat (if any). Add onions and continue cooking until the onions are beginning to brown a bit. Add the beans and liquid and the tomatoes. Cook stirring frequently over med low heat until well combined. Reduce heat to a simmer and keep warm.
Heat cheese sauce. (I used what I had, some frozen sauce)
Poach eggs to your favorite degree of doneness.
Spoon sausage mixture onto plates, top with poached eggs and spoon cheese sauce over the top.
All Bob could say was WOW.
