Marie's Veggilicious Meatloaf

3 Tablespoons butter
1 cup onion -- diced
1 cup carrot -- diced
1/2 cup celery -- diced
1/4 cup green bell pepper -- diced
1/4 cup red bell pepper -- diced
3 eggs
1/2 cup ketchup
1/2 cup half and half
1 teaspoon ground cumin
1/2 teaspoon ground nutmeg
1/4 teaspoon cayenne pepper
1/2 teaspoon salt
1/2 teaspoon ground black pepper
2 pounds lean ground beef
12 ounces ground sausage
1 cup fresh toasted bread crumbs
In a heavy saucepan, cook vegetables in butter, stirring often, until juices have mostly evaporated, about 10 minutes. Set aside to
cool, then cover and place in the refrigerator for at least an hour.
Heat oven to 350 degrees. In a mixing bowl beat eggs, ketchup, half-and-half and spices together. Add meats, breadcrumbs, and vegetables to the mixture and mix thoroughly. Form mixture into one large loaf or put into two loaf pans. Bake until cooked to 160 degrees on a meat thermometer, 45 minutes to an hour. Let rest 20 minutes before slicing. Serves 6-8
