Saw this deep-fried hamburger on the Travel Channel.

(Maybe Jamie Oliver should pay them a visit.)

Wow, that's simply disgusting. My night crew is supposed to drain oil, replace filter and refill every night. If they don't do it, I don't fire it up. ( And I just cook potatoes.)

Yuck.

Yet they have a booming business, serving some 400 of those a day. Sure, we each may have our culinary "guilty pleasures," but that certainly wouldn't be one of mine.

After all those years of accumulation the only grease in the pot is the grease from the last weeks hamburger patties. The previous decades of grease have undergone chemical transformations and evolutionary changes to the point that a run thru a chromatograph would probably not pass the health inspector. Therefore I don't believe the story of continuous grease. Some morning a new compound would have formed and be deadly. Bacteria are not the only problem in the kitchen.
