I don't know what I was thinking, neither do I! Might as well get as much nutrition as we can from spuds. I prefer the yukon golds for potato salad.

Likewise part of the no-peel zone. Kind of guessed what was going to happen, though, considering how often blanching is used for peeling things, including tomatoes for concasse, of course.

Interesting video. But since it takes 15 minutes, then ice bath. You could have them peeled with a peeler by then.

As far as to peel or not to peel, if my potatoes are 'dirty' I peel them, if I buy the nice clean potatoes with the thin skins, I just leave it. And if they are red, I leave it no matter what, even for potato salad. Who doesn't like skin-on red mashed potatoes? Tastes great!
