Fire and Ice Appetizer - mjkcooking - 10-25-2009

Made this appetizer for daughters baby shower on saturday and wanted to share
it with you.
This is made from the Land O lakes website.

The spicy heat of the pita crisps is tamed by the cooling flavors of pineapple and lime.

Salsa Ingredients:

1/3 Cup Sugar
1/4 Cup lime juice - fresh
1 (20 oz. ) can crushed pineapple
1 teaspoon finely chopped fresh gingerroot
1/4 cup finely chopped onion
2 tablespoons of chopped fresh cilantro.

Pita Crisps Ingredients:

4 (6 inch _ pita breads
1 cup melted butter
4 teaspoons chili powder
1 teaspoon garlic salt
2 teaspoon hot pepper sauce

Combine all salsa ingredients EXCEPT onion and cilantro in3 quart saucepan. Cook over medium high heat until mixture comes to a boil (3-5 minutes) Contineu cooking stirring occasionally, until mixture is thickened (9 to 12 minutes) Refrigerate until chilled (at least 2 hours)

Heat oven to 375F cut each pita into 6 wedges, separate each wedge in half (48 wedges total)
Stir together butter and seasonings in large bowl. Add pita wedges, toss withe seasoned butter until well coasted.

Place pita wedges onto ungreased 15x10x1 inch baking pans in single layer. Bake for 6 minutes. Turn each wedge over, continue baking for 2 to 4 minutes or until wedges are golden brown.

At serving time, stir onion and cilantro into salsa mixture. Serve with pita crisps.

Notes: I didn't have time to make crisp so bought Sweet Spicy Chili Dorito
chips to serve with.

Marye, this sounds sooo good! I love the pineapple in the salsa! Sounds yummy...copied and saved!

I think I need to check my ingredients boxes more often. I picked up Corn Flakes for Oven Baked Chicken with Corn Flakes today. The box was sitting on the bar over the stove, and I looked up...What do I see? A recipe similar to the one I'm planning to make...LOL!

That does sound good - I make a fire & ice thing but it has watermelon in it.

So, how did the shower turn out? Were you pleased with all the foods?

The baby shower was great and we had lots of talk and lots of fun.
I have four friends from my hometown in Iowa that live out here and so they
all came and a gal I work with. and Jen's husband side of the family all there
Aunts and Uncles and cousins. -

I brought several types of smoked salmon and some salmon pate - that we like
over here from SeaBolts Smoked Salmon

and Made the Fire and Ice Appetizer and the Red Pepper Dip in CAH.
I took lots of veggies and crackers.

Maryjo and Beth made - crab cakes with Aoli deviled eggs, mushrooms with pesto
and cherry tomatoes filled with crab.

We had Cupcakes for dessert.

Was a great day - Jen is due in less than 2 weeks so we are all on pins and
needles when the phone rings.

Tomarrow we are sighned up to take Grandparenting classes - for all the changes
that have happened in the last 32 years. - Ha Ha. will be a fun class.

I was pleased with everything.

The luncheon sounds wonderful and lots of people. I bet it was a wonderful day for all! Good luck to the new Mom-to-be!

Happy your luncheon was a success.

Grand-parenting classes! Why do people think that having babies and raising children is any different today than it has been since forever? The only difference is the current generation is spoiled rotten.

Oh I may do this on this Thursdays 3rd annual CHP breakfast. Cause after breakfast over half of them stay for a early afternoon party and this sounds yummy!

As far as current generation goes - I have always thought that history will
write of the injustice done to the children - so now I will step down
off my soap box - !
