Tropical Grapefruit Cream Soda - chef_Tab - 06-02-2009

I saw this in my email from Plate online. I got very excited because grapefruit juice is one of my favorites. I was wondering if this would be even better if one substituted vodka for most of that water! I can't try it yet as I am still on antibiotics.......and boy is that getting old! It just sounds so yummy and I would probably make it my dessert.

Use gin and salt and it becomes a magical salty dog (of a sort)!!

Bill, you had me addicted to salty dogs a while back. I almost had to join a new club. Now I am down to 2 or 3 per week instead of daily!

Theresa, are you going to share the recipe?

And in you Salty Dogs, what kind of grapefruit juice do you use? Sweetened, not sweetened, regular, ruby red?

I buy the "fresh squeezed" not from concentrate either by Florida's Natural or Simply Grapefruit, whichever is on sale. I think they only carry the ruby red. It is not sweetened.

From Plate online:

Tropical Grapefruit Cream Soda

Yield: 4 servings
Menu Price: N/A; Food Cost/Serving: N/A


Pearl tapioca 1/2 C
Water 4 C
Honey 1/2 tsp
Vanilla 1 TBS
Tropical fruit assortment (kiwi, strawberries) as needed
Grapefruit juice, freshly squeezed 2 C
Ice, shaved 2 C
Seckel pear, segmented 1 each
Instructions:

1. Cook tapioca in water with honey and vanilla. Reserve to chill.

2. Cut and segment tropical fruit for garnish. Reserve.

3. Combine tapioca, grapefruit juice and ice and mix well. Pour into chilled glassware and garnish with cut fruit. Serve.

I am thinking it will happen this weekend. I will be off antibiotics and plan to incorporate vodka. Is pearl tapioca something special? I have tapioca. Not sure I can get my hands on seckel pears yet either. It won't matter though, they are just a garnish.

So, with the tapioca that makes it a kind of bubble tea drink, sort of, along the lines of, right?

I believe the pearlized softens up faster, making it the "quick oats" version only with tapioca
