Zucchini Jack Casserole - cjs - 10-04-2008

This is just a great comfort casserole that uses up a lot of croutons, zucchini and cheese bits. I didn't have any jack, so used up Manchego, Fontina and cheddar - it seems to be a very forgiving dish. It's from an old neighbor who brought it to a Pig BBQ.

ZUCCHINI JACK CASSEROLE

Recipe By :Noanie & Berch

2 pounds zucchini -- about 8 small
4 eggs
1/2 cup milk
1 teaspoon salt
2 teaspoons baking powder
3 T. all-purpose flour
1/4 cup parsley -- chopped
1 clove garlic -- minced or pressed
1 small onion -- finely chopped
7 ounces can diced green chiles
3 cups jack cheese -- shredded (~12 oz.)
1 cup seasoned croutons
3 T. butter -- melted

Slice zucc. 1/4" thick (~7 cups). In a large bowl, beat together eggs, milk, salt, baking powder, & flour till smooth.

Stir in parsley, garlic, onion, chiles, cheese & zucc.
Spoon into greased 9X13" baking dish. Lightly mix croutons with melted butter & sprinkle over zucc. mixture.
Bake uncovered in 350 oven till mixture is set in center & zucc is tender when pierced (35-40 min.).
Let stand for about 10 min. before cutting.

And used up the pie dough triangels (from the apple pie) with some Chocolate Tapioca pudding - so good.

I'm going to try this with a can of Hatch chilis--sounds really good!!

OH!! I'm being so damned stingy with those, I'll let you go first and if you like them/it, I'll try it. I was going to do the dip you gave me the recipe for using them when our friends were here, but looked like too much for just the four of us. But, I'm anxious to try it.
