Tapenade Recipe - bjcotton - 06-21-2008

My sister Carol had a sandwich at the Safeway grocery store and they put their tapenade on it. Now she's hooked. Anyone have a simple but tasty recipe? I began looking through my cookbooks last night but couldn't find one I liked.

I'll see if I can find the one I used. More often than not I just toss a drained can of black olives and an equal amount of really good green olives (or whatever you prefer), garlic, capers, and anchovies into the food processor and chop. Then I just add some lemon juice and olive oil - oh and black pepper. I should make some soon - Bob loves it.

I've had good luck with this one - lxxf - 06-22-2008

1/2 cup black olives
1/4 cup green olives - no stuffing
dollop of anchovy paste
2 tbsp capers, drained
1 small can of tuna, drained
1 T lemon juice
1 cup of fresh basil (or parsley) or 1 T pesto

process together in food processor and slowly add 1/4 cup olive oil
stir in 1/4-1/2 cup sour cream
