Cardamom Fudge - MUSICMAKER - 12-06-2007

This fudge is the real thing -- not made with the marshmallow fluff. Cardamom lovers will enjoy this confection!


CARDAMOM FUDGE

Yield: approx. 1-1/2 pounds

INGREDIENTS:
2 cups sugar
2 tablespoons butter
2/3 cup milk
1/2 to 3/4 teaspoon ground cardamom
1/4 teaspoon salt
1/4 cup coarsely chopped walnuts
2 tablespoons light corn syrup
1/4 cup coarsely chopped pistachios

DIRECTIONS:
1. Cook sugar, milk, salt and corn syrup in heavy 2-quart saucepan over medium heat, stirring constantly, until sugar is dissolved.
2. Cook, stirring occasionally, to 240F on candy thermometer or until small amount of mixture dropped into very cold water forms a soft ball that flattens when removed from water.
3. Remove pan from heat.
4. Add butter and mix well.
5. Cool mixture to 120F without stirring. (Bottom of pan will be lukewarm.)
6. Add cardamom. Beat vigorously and continuously until candy is thick and no longer glossy, 5 to 10 minutes. (Mixture will hold its shape when dropped from spoon.)
7. Quickly stir in nuts and mix well.
8. Spread mixture in buttered 9x5x3-inch loaf pan.
9. Let stand until firm. Cut into 1-inch squares.

WOW! Thanks! Will definitely try this, but as "cardamom fudge," not "cardamom-nut fudge."

Believe it or not, one of the hard candies they sell here is a cardamom candy. It's not even in any special stores or displays - just in a bag in the candy aisle of the grocery store with all the other candies. The same company also makes hard candies of (separately) mango, tamarind, and passionfruit.

All right Billy...Have you been holding out on me?

I have always thought they need a flag or some way to mark posts you want to come back to - I often can't copy recipes when I am reading. Usually loose track of them. Are you telling me there has been a way to do this all along???? Please share!

Am I the only one who didn't know this?

Ok - went searching. Found it! Can't believe I missed it all this time. For anyone else wondering - at the bottom of the post screen there are 4 buttons - I think one is the notify moderator, one is remind me, one is email and I don't remember the other - probably the print mode which I am always looking for too! It will put the reminded posts on your My Home page under reminders.

When you reply - not the quick reply - you can also mark a post as a favorite. So far this is the only way I know to do this - then it will also list these on your My Home page and any replies to the favorite post.

The things we miss...
