Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 1/2 pounds cranberries
8 ounces mascarpone cheese -- room temperature
1 quart heavy whipping cream
36 ladyfinger cookies
1 cup balsamic vinegar
1/2 cup sugar -- divided

I a medium pot over medium low heat, combine cranberries, balsamic vinegar, 3 Tbs sugar and 1/2 cup water. Bring to a simmer and cook about 25-30 minutes, until cranberries are soft and liquid has reduced by half. In a large mixing bowl, beat whipping cream until soft peaks form. Add mascarpone and remaining sugar and continue to beat until set up and well combined. Using a 9- x 13- x 2-inch baking dish make a layer of whipped cream. Top with a layer of cranberry balsamic reduction and than a layer of cookies. Repeat once ending in a layer of whipped cream. Cover and chill at lease 4 hours or overnight. Serve chilled.

Whoops, I forgot to ask about the balsamic. Do you need a really good one or will a less expensive (under 10) one do? CI often recommends using inexpensive (but not cheap) bal vins.

Inexpensive one! Use your better ones for things you will not cook off.

This looks absolutely amazing! I will have to make this for Christmas It sounds like a show stopper!

Re: Cranberry Balsamic Tiramisu - cjs - 11-19-2007

Thanks Billy!! PJ, I would use a medium priced one - some of the inexpensive taste like the "cooking" wines -

Man, this does look so good! Now, who's going to be first...

Re: Cranberry Balsamic Tiramisu - bjcotton - 11-19-2007

PJ, I usually a big pot around that is

I usually use a medium expensive balsamic. I recently purchased a couple of 1.35 fl. oz. bottles of balsamic for a fair number of $ for Christmas presents. The store where I bought it was offering a 8.5 oz. bottle of Elsa balsamic for a decent price...it's what I use for everyday.

By-the-way, I tasted this at the store and it was delishus!

Anon was looking at this thread - I never did get it made and it wasn't in my MasterCook. How did I miss doing that. Did anyone ever make it?

This does sound good. I'm going to copy it, but I intend to try a regular tiramisu first. Just as soon as I take off a few (dozen....LOL!) pounds!
