Cranberry Balsamic Tiramisu - bjcotton - 11-18-2007 Here ya go Jean... * Exported from MasterCook * Cranberry Balsamic Tiramisu Recipe By : Serving Size : 0 Preparation Time :0:00 Categories : A List Cakes-Pies-Cookies Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 pounds cranberries 8 ounces mascarpone cheese -- room temperature 1 quart heavy whipping cream 36 ladyfinger cookies 1 cup balsamic vinegar 1/2 cup sugar -- divided I a medium pot over medium low heat, combine cranberries, balsamic vinegar, 3 Tbs sugar and 1/2 cup water. Bring to a simmer and cook about 25-30 minutes, until cranberries are soft and liquid has reduced by half. In a large mixing bowl, beat whipping cream until soft peaks form. Add mascarpone and remaining sugar and continue to beat until set up and well combined. Using a 9- x 13- x 2-inch baking dish make a layer of whipped cream. Top with a layer of cranberry balsamic reduction and than a layer of cookies. Repeat once ending in a layer of whipped cream. Cover and chill at lease 4 hours or overnight. Serve chilled. I recently purchased a couple of 1.35 fl. oz. bottles of balsamic for a fair number of $ for Christmas presents. The store where I bought it was offering a 8.5 oz. bottle of Elsa balsamic for a decent price...it's what I use for everyday. By-the-way, I tasted this at the store and it was delishus!
