Tropical Passion Chicken - labradors - 08-25-2007

Here's a kind of sweet and sour I just threw together as an experiment with some leftover roasted chicken one night.

Ingredients:
  • Meat pulled from two cooked chicken thighs and drumsticks.
  • 1 C Pineapple juice
  • Pulp and seeds from three passionfruit
  • 2 Tbsp Light-brown sugar
Instructions:
  • Bring everything to a simmer together in a sauté pan.
  • Simmer until reduced completely (i.e. all liquid is absorbed/evaporated).
Variations:
  • This would probably work well with uncooked chicken marinated in the mixture overnight.
  • Passionfruit seeds are crunchy. To make the crunchy bits smaller, purée the passionfruit pulp and seeds first.
Note:
  • When selecting passionfruit, the ones that look wrinkly and old are the good ones, and the ones that look pretty and smooth are not as good.

I can get those grenadillas quite often here---if not, the canned ones are great for the pulp (GREAT on Pavlova!!!)

Thanks. Passionfruit is relatively inexpensive here - only about 14 cents each.

One other thing you would probably like, then, is to make a regular Lindy's cheesecake, but in place of the 1/4 cup of heavy cream, use 1 cup of passionfruit purée (I even included the seeds in that). Voilà: a passionfruit cheesecake!

CHEESECAKE???? You breaking my heart---but may twist my arm a bit
