Dinner with Jean & Roy! #3 - Harborwitch - 07-20-2007 Bob got home just in time for the dumplings - so we adjourned to the patio for a before dinner treat and some wine. Then back to the kitchen to get the chicken ready for the Banana Flowerless salad. From "Hot Sour Salty Sweet" by Jeffrey Alford & Naomi Duguid (If you like Thai food you MUST own this book" Peppercorn Coriander Root Flavor Paste 2 tsp. black peppercorns 5 to 6 large cloves of garlic coarsely chopped 3 tbs coarsely chopped coriander (cilantro) roots (stems if you don't have the roots). Pinch of salt 1 tsp Thai fish sauce Place the garlic, peppercorns, coriander roots, and salt in a grinder and grind to a coarse paste. Add fishsauce. Smear this all over the chicken and allow to rest for a few minutes. Then grill the chicken breast. While Bob was grilling the chicken we worked on the lemongrass patties and the soup. 1 lb ground turkey (or lean ground pork) 1/2 c. chopped shallots 1 or 2 stalks lemongrass trimmed and minced 1/4 tsp salt 1/2 tsp freshly ground black pepper Combine the ingredients well and form into patties.
