Favorite coleslaw recipes - Old Bay - 07-03-2007 Lets post our favorites--it's summertime and the 4th is upon us!!! Creamy Buttermilk Coleslaw 1 lb red or green cabbage, shreadded fine Salt 1 medium carrot, shredded on box grater 1/2 cup buttermilk 2 T mayo 2 T sour cream 1 small shallot, minced 2 T minced fresh parsley leaves 1/2 t cider vinegar 1/2 t sugar 1/4 t Dijon mustard 1/8 t ground black pepper Toss cabbage and 1 t salt in colander and let stand until it wilts--1 to 4 hrs. Rinse under cold running water, press to drain--no squeezing! Pat dry. Place cabbage in a large bowl with carrots. Stir remaining ingredients together and pour over cabbage and carrots-toss and refrigerate until chilled. Makes 6 cups--from a turn of the century Cook's. I'll post another one when I get a break. COLUMBIA RIVER COLE SLAW 6 Tbsps mayonnaise 2 Tbsps mustard - French's 2 Tbsps sugar 2 Tbsps honey 2 Tbsps vinegar -- cider 4 Tbsps evaporated milk 3/4 tsp horseradish 1 tsp poppy seed Mix all together and add to: cabbage, shredded currants crushed pineapple gr. onions ---- what a great idea, Bill - we love coleslaw!!!! Re: Favorite coleslaw recipes - Old Bay - 07-03-2007 Here is another of my favorites----- Lemon Coleslaw 1/2 Cup mayo 1/2 cup sour cream 1/4 cup fresh lemon juice 2 T Dijon mustard 2 T olive oil 2 T sugar 1 T white wine vinegar 1 T prepared horseradish 1 t salt 1/2 t celery seeds 1/2 t pepper 8 Cups shredded cabbage 1/2 red bell pepper cut into matchstick strips 1/2 green bell peppercut into matchstick strips 1/4 red onion cut into matchstick strips 1 carrot, shredded 2 T chopped fresh parsley 2 t lemon zest Combine first 11 ingredients in bowl and whisk to blend. Refrigerate until cold. Combine enough with remaining ingredients in a large bowl to your taste and serve. Makes 6 servings. Re: Favorite coleslaw recipes - bjcotton - 07-03-2007 Oh boy! I just love creamy coleslaw! Not too fond of the vinegary stuff, but it'll do in a pinch. Mix together the mayonnaise, sugar, vinegar, and seasoning. Spoon over cabbage mixture. Toss well. Cover and chill before serving. Cole Slaw 4 Cups. Cabbage 1 cup Celery 1 Cup Califlower Chop finely the three above ingredients Dressing: 1 cup Mayonnaise 1 Cup Sour Cream 1/4 cup Green Onion sliced 1/4 cup Green Pepper diced 1 Tbl. Sugar 1 Tbl. Vinegar Any type - I use Rice Vinegar green label 1 tsp. Salt 1/2 cup Cucumber diced Toast Topping 2 Tbls. Butter 1/2 cup Peanuts Heat till Toasted Mix nut mixture with 2 tbl Parmesan Cheese Toss first 3 ingrediends together and cover. just before serving mix in the dressing mixture. sprinkle nut mixture on top Re: Favorite coleslaw recipes - HomeCulinarian - 07-04-2007 I usually just buy Marzetti's coleslaw dressing! Re: Favorite coleslaw recipes - Lyndee - 07-05-2007 I must get my proportions right ( recipe at my work kitchen) and I will post the recipe for a wonderful dressing for coleslaw that is boiled first. White wine vinegar/sugar/oil/turmeric/mustard seeds etc. Just fabulous and the slaw is best a few hours after dressing. But...aint we all?? lolol Re: Favorite coleslaw recipes - pjcooks - 07-05-2007 Billy, you either posted the jerk slaw recipe or told me where to go-anyways, I made this for a game party (football? baseball? I don't know), but it was very good. My recipe is similar to Bill's lemon one, w/out the lemon, must try that. I always add celery seeds to my coleslaw, gives some zip w/out tons of vinegar. PJ |
