I'd be mixing it up into different spinach fillings/stuffings, and freezing. Or just blanching and freezing. Either way, great score!

I've never made a crepe. but I'm looking for that Spinach Souffle someone mentioned. PJ, that spinach won't last long enough to be frozen. Probably by tomorrow it'll be gone.

Crepes are really very easy to make. If you, or anyone, would like the recipe for these let me know and will post it.

Crepes rule. Sweet crepes, savory crepes. Crepes filled with all manner of meats and veggies. Topped with sauces, cream and cheeses, baked, side by side, singing flavour. Crepes filled with fruit, meringue, custards, purees. Hot or cold. I love crepes.
