Do you have a favorite Salmon recipe - piano226 - 05-27-2007

I bought a whole salmon filet yesterday and would like to cook it as a whole piece...Do you guys have any suggestions?

Well, I was going to post my two favorite ways for salmon, until I remember this one also - we love all three.

DRY RUB FOR SALMON

Serving Size : 10

3 Tbsps firmly packed brown sugar
2 Tbsps paprika
2 tsps kosher salt
1 1/2 tsps freshly grd. black pepper
1 tsp chopped fresh thyme ( or 1/2 tsp. dried)

Combine the rub ingred.
Sprinkle fillets w/lemon juice
Coat either both or one side of each salmon fillet.

Roast at 375 - 400° to temp. of 140°.

Description:
"Tom Douglas recipe - 1st tried at F.H. 10/30/04 -wonderful flavor!"
Yield:
"4 oz. servings"

Serving Ideas : ----
The spice rub can be made a couple days ahead and stored, tightly covered, at room temp.
Good wine with the salmon - an Oregon Pinot Noir.

SALMON, PUGET SOUND

3 pounds Salmon fillet
1/2 lemon -- just the juice
2 tablespoons brown sugar -- packed
1 tablespoon fresh tarragon -- chopped

Rinse fish & pat dry.

Lay fillet, skin down on double thickness of foil.

Ream juice from lemon & brush over fish.

Sprinkle w/brown sugar and tarragon leaves.

Grill for approx. 10 min. or till done.

or

Roast in a 425 oven for ~18 min. or to 140°

SALMON WITH ROASTED ASPARAGUS

Preheat oven to 450.

Arrange ~1 lb. asparagus, trimmed, on a rimmed baking sheet.

Drizzle with 1 T. e-v. olive oil and turn the asparagus to coat.

Sprinkle w/salt & pepepr.

Place salmon on top of asparagus; sprinkle w/salt & pepper.

Roast till salmon is just opaque in center, ~20 min.

Transfer asparagus and salmon to a platter. Spoon the sauce (below) over. Makes 4 servings.

Lemon-Caper Sauce

Mix together:

2 T. fresh lemon juice

2 T. minced red onion

1 T. olive oil

1 T. drained capers, chopped

1 tsp. chopped fresh thyme (mine looks horrible right now, so used dry - not bad )

1/2 tsp. lemon zest (I use almost the entire lemon's zest)

Jean's Salmon with Asparagus is my all time favourite!!! but a close second is to do it on a plank. If it's a big side of salmon, put two planks together!!!
