Chili powder/taco seasoning... - Ron - 01-17-2007

Rather than use those noxious little supermarket packets of chili powder and taco seasoning, I've been making my own out of individual Penzeys spices. Doing it this way also keeps my individual spices fresher. Present recipes are good, but I would not object to something better. Does anyone have a killer recipe? I would like flavorful, but not hot (i.e., easy on the cayenne). TIA

Ron, I have a Fajita seasoning recipe and Emeril's Essence if you like..here's the Fajita:

Fajita Seasoning

Recipe By :Busy Cooks
Serving Size : 1 Preparation Time :0:05
Categories : Marinades-Seasonings-Rubs

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 tablespoon cornstarch
2 teaspoons chili powder
1 teaspoon salt
1 teaspoon paprika
1 teaspoon sugar
3/4 teaspoon chicken bouillon cube -- crushed
1/2 teaspoon onion powder
1/4 teaspoon garlic powder
1/4 teaspoon cayenne
1/4 teaspoon cumin

Combine all of the ingredients. Pour into a small airtight container and store in a cool, dry place. Makes the equivalent of 1 packet of commercial or purchased seasoning.

here's another one - this would be fun to play with, I like the seasonings in Billy's also.

TACO SEASONING MIX

1/4 cup flour
1/4 cup chili powder -- Gebhardt's
1/4 tablespoon tabasco sauce
1/2 teaspoon cumin powder
1/2 teaspoon garlic powder
salt to taste

Mix all together and use in place of commercial taco seasoning packages.

I found this one on recipezaar. Plan to try it but haven't yet.

1 1/2 teaspoons paprika
1 teaspoon chili powder
1/2 teaspoon oregano
1/2 teaspoon salt or garlic salt
