Butternut Squash Soup - cjs - 10-16-2006
Loved this one!!! Made the Sausage-Apple Empanadas - yum!
Altho, the filling for the empanadas can be played with, maybe perk it up a little. But, I'd make both again anytime!! (So, first two tried from this book have been winners!!!
)a little p.s.note - I used 1/2 beef stock and 1/2 corn stock (both homemade) and what a nice combination for the soup.

I picked up a butternut on Saturday to make this soup! So thank you for your suggestion for the stock! I'm planning to make this very soon and it will be fun to check against your review.

I grew the Butternut Squash that I used in that soup...We loved it.
