It was wonderful!!! For Roxanne because no one knows when she will get her book----
1/2 cup onion, sliced
2 dried chilis, seded, torn (I used pasaella chilis)
1 corn tortilla
1 clove garlic crushed
2 T veg oil
1 cup chicken broth
1/2 cup crushed canned tomatoes
1 T fresh lemon juice
Salt to taste
3 1/2 cups water
1 cup polenta
1 t kosher salt
1 cup grated monterey Jack cheese
1 1/2 lbs top sirloin, cut into 1" cubes
3 red jalapenos seeded, sliced into rounds
2 T veg oil
1 T sugar
2 t chili powder

SAUTE the first 4 ingredients in 2 T veg oil over med high heat until onion softens. Add broth and tomatoes. Reduce heat to medium and simmer 2 min--cool--transfer sauce to blender and puree with lemon juice until smooth. Season with salt.

BOIL water in a saucepan over med high heat: gradually whisk in polenta (corn meal). Add salt, reduce heat to low and cook 5 min, stirring often. Fold in cheese--keep polenta warm off heat.

SAUTE beef and jalapenos in saute pan in 2 T oil over high heat. Cook until beef is browned but rare in the center, about 5 min. Add chili powder (ancho if available) sugar and salt to taste. Saute another minute. Serve beef over polenta with chili sauce around.

Thanks for posting the recipe Bill!! We're on our way home today, so Roxanne you'll probably be the last to see the magazine, poor baby. The stack of magazines waiting for me will be a mile high...

This dish may be on the menu Sunday.
