Crispy Crusted Snapper with Sauteed Spinach - Roxanne 21 - 08-11-2006

YUMMM!!!! This is in the Weeknight Menus

We dont have snapper available here so I used Kingklip--a firm fleshed white fish which is truly incredible. The crust was very flavorful--I used panko for the coarse bread crumbs. The mayo sauce was tasty and really easy to put together---different take on tartar sauce, lighter and less tangy.

All in all---I will make this again!! DH gobbled every morsel

The spinach was great as well--but I love spinach in any form.

If you like fish--you will ove this---be sure to use the FRESHEST you can get your hands on--makes the world of difference.

Thanks for the review. I love it when others review things. Gets me to try stuff I might put off trying. Especially fish - I like it, dh is ok about it, but for some reason I am reluctant to cook it.
