Last night was calamari steaks in a lemon egg batter, roasted parm. squash, and fresh lemon pepper pasta. Yummmm.

How funny! I have Chicken Enchilada stew in the freezer - all I need is to add a sprinkling of cilantro and I'm good to go. Thanks for the idea, Sharon.

Sharon, a few of us made that recipe after you shared it a while back. It was really good!
We are going to have some grilled salmon, risotto, and asparagus. Watermelon for dessert.

As of this moment I am making pork enchiladas, and something with pinto beans and hominy. I dug in the freezer and found some cochinita pibil and some carnitas. I've got some green enchilada sauce and cheese. It should be easy. Of course plans could change . . .
