Chicken Cordon Bleu - Old Bay - 07-31-2016

We need a recipe for this that can be prepared ahead of time,and finished within an hour of serving. This Is for our 21 Club on Derby Day next May. Can any body help us?

Old Bay - have to get through the Breeder's Cup first!

But I will give you a head's up on a horse I already like for the Derby. "Big League". By Speightstown. Won very nicely at Del Mar yesterday and is headed to the Del Mar Futurity.

Bill, this is the method I used at the hotel and it's a good prep ahead and finish off quickly.

CHICKEN CORDON BLEU

Recipe By :a Chef's Journey
I love to serve this dish with a Mornay Sauce.

Preheat oven to 350° & lightly coat a b. sheet w/vege cooking spray.
Combine bread crumbs and oil.

Top each pounded breast with a slice of ham and a slice of cheese*, folding as needed to fit.
Roll up & secure w/toothpicks.

Dip each roll in flour, egg; coat w/crumbs; place on b. sheet.
Bake 20 minutes or to 160°.

Remove picks before serving.


NOTES : These freeze nicely.
Serve napped with Mornay Sauce

*An option for the cheese - rolling the filled chicken can be difficult if the chicken/ham/cheese is not thin enough. An alternative would be to layer a thin slice of ham and a piece of cheese cut into a log shape long enough to lay across the chicken. This makes rolling a lot easier.

This recipe and video is what I use for Chicken Kiev and while it takes some prep time, it comes out beautifully and with no leaks:

I could see where you would just sub a cheese blocked wrapped in ham slices for the compound butter. I'm going to try that soon.

Anyway, the technique is fantastic!

Jean, can you freeze after cooking, or at what point in the prep? Thanks so much for everything. Great video Barbara!

Crap, I can't remember at what point I froze them, but for a dinner party, I think I'd try for prepping 1-2 days ahead and not try to freeze.
