Lemon and Spinach Orzo Servings: 4 3/4 cup onion -- chopped 1 tablespoon olive oil 1 tablespoon garlic -- minced 1 cup dry ozro pasta 1 cup low-sodium chicken broth -- hot 1 cup water -- hot 3 cups stemmed fresh baby spinach 2 Tablespoons lemon zest -- minced 1 Tablespoon unsalted butter 1 teaspoon each salt and black pepper (I would start with less pepper) 1/4 teaspoon freshly ground nutmeg Saute onion in oil over medium-high heat until softened, 3 to 5 minutes. Add garlic and cook 1 minute until fragrant. Add orzo, stir to coat with oil, and cook for 1 to 2 minutes. Add broth and water, stirring often until liquid is absorbed and orzo is cooked, 9 to 10 minutes. Off heat, stir in spinach, butter, salt, pepper, zest and nutmeg. Stir until spinach wilts. I think I'm going to sub out green beans cut small on the bias, and add it to the orzo when I add the liquids. The bagged spinach was on it's last leg at the store and green beans looked good. Re: T.G.I.F. Dinner, 7/15/16?? - cjs - 07-16-2016 Had our first artichokes with grilled lamb chops yesterday!! For our later snack - Pizzadilla (Quesadilla Pizza) – easy and so tasty! I used what was called for, but added chopped dry salami along with a little cilantro with the basil.
