Chicken Caprese - esgunn - 04-15-2006

Does anyone have a chicken Caprese recipe? I have been drooling over the Olive Garden commercials for Chicken Caprese. I know I will like it better if I make it myself, but don't have a recipe.

I got one off of Food Network from a chicken challenge contest that I will try, but wondered if anyone had one thay have made before.

This is taken from Wikipedia Encyclopedia in refence to a salad. I would assume you add chicken:

Insalata Caprese (Salad in the style of Capri) is a simple salad of sliced fresh mozzarella, plum tomatoes and basil from the Italian region of Campania. It is seasoned with salt, black pepper, and olive oil. Oregano can replace the basil. The main ingredients are similar to Pizza Margherita, but are not cooked.

Ideally, the mozzarella is di bufala della Campania, the olive oil is extra virgin from the peninsula of Sorrento and the tomatoes and basil are grown in the full sun of the mezzogiorno.

The dish reproduces the colours of the flag of Italy.

In a variation, mustard can be added between the slices of tomato and mozzarella, but certainly not in original dish.

Drool no more! Here is the original at home recipe from the Olive Garden. I haven't tried this one yet but have tried some of the recipes that they feature on the site and they turn out really good!

Sounds interesting - I think I'd rework the recipe a little (the sauce seems a little heavy for Angel Hair pasta, etc.) - but the flavors sound good!

I used to do Tomato Caprese at the hotel all the time, but never heard of the addition of mustard - can't wrap my mind around that addition, hmmmmmm. Caprese is such a pure combination of flavors. But, I guess I shouldn't knock it till I've tried it, eh?

HEY!! I just hit 100 posts!!! Do I get a knife set???

Olive Garden did ok. Let me know how you tweek the sauce. I think I would use sliced fresh mozzarella at the end.

Thank you so much for the recipe. I will try it soon and let you all know what I think.

One initial thought on the recipe...in the press release they said it as a basil, garlic, butter sauce. And it was made with cream! I don't think there was butter in it!

Old Bay - have you actually tried it, or just commenting on the recipe? I agree - I think I would use slices of mozzarella.

Roasted Chicken Caprese

4 boneless skinless chicken breast halves
Lemon Vinaigrette:
6 medium Roma tomatoes
1 teaspoon sugar
1 teaspoon kosher salt
1/4 cup olive oil
8 ounces mozzarella cheese -- cut in 1/4-inch pieces
1/4 cup coarsely chopped fresh basil leaves
1/2 teaspoon pepper

Place chicken in a 1-gallon zip-top bag. Add Lemon Vinaigrette, seal and
marinate in refrigerator at least 30 minutes.

Preheat oven to 375 degrees F.

Cut each tomato into quarters lengthwise. Place in a medium bowl and toss
gently with sugar, salt and olive oil. Spoon tomato mixture onto a rimmed
cookie sheet so that tomato pieces don't touch. Roast for 30 minutes.
Spoon tomatoes and all accumulated juices into a small bowl. Add cheese,
basil leaves and pepper, tossing gently. Let sit at room temperature while
chicken cooks.

Reduce oven temperature to 350 degrees F.

Remove chicken and discard marinade. Place chicken on same cookie sheet
used to roast tomatoes. Roast for about 30 minutes, turning once, or until
fully cooked through.

To serve, place 1 chicken breast half on each heated dinner plate. Spoon
1/4 of tomato mixture over top.
